I'm not exactly sure what your issue with thumbnails is or what Subjunk will be looking for in your logs but I do see that none of your shared folders have "Monitor played status of files" enabled so they will not be marked as played and have their thumbnail updated.
Try enabling it for each folder and see if that makes a difference.
