No voice (center channel?) audio with default FFmpeg engine

EDIT - clarifying and simplifying the issue as it was a bit unclear before.
While playing a file back via the default engine (FFmpeg) the voices and some other small sounds are missing, I am assuming these are on center channel. When I go into the transcode folder and select [FFmpeg] {Audio: DTS/English ()}* the voice tracks and all sounds play back fine.
I am streaming from UMS 5.0.1 on Win7 x64 to a PS3 which is connected to TV via HDMI and my stereo audio receiver via 2-channel RCA.
It works fine on VLC and Media Player Classic (Windows Media Player won't let me skip ahead to the voices for some reason) - so I'm assuming it isn't a codec issue but I could be wrong.
What I would like to do is default to the FFmpeg transcode which properly plays back all sounds, or figure out what is different between default and FFmpeg transcode settings so I can resolve the issue at the source.
Debug and media info are attached. Let me know if I can provide any other pertinent info.
